Grilled Tomatoes are the FASTEST vegetable you can make!! My kids were not very sure about this till they tasted it!!
What is important when making this- you use very large beefsteak tomatoes. Large ones- and you cut them very thick.
1 large tomato
pinch of coarse salt
pinch of cracked black pepper
approx 1 or 2 tablespoons of olive oil
4-5 slices of fresh mozzarella cheese
Cut your tomatoes thick. We got approximately 4-5 slices. Lay them out on a platter, and drizzle olive oil, salt and pepper on each side.
On a very hot grill, grill your tomatoes. They will only need to grill for approximately 1 minute (maybe 2) on each side. Once you flip it over to the 2nd side. Add your slice of mozzarella cheese. Do not over cook- the tomatoes will turn soggy on you if you leave them on too long. (or you may just burn them too hahah)
Remove from your grill and enjoy!
