MB’s Lemonade Pound Cake

This is a very easy recipe. It comes from in part from my granny. Then I just changed stuff and added more to my liking. I have made it a few times and thought it was due time to blog about this cake. We always brag about Chad’s creations– maybe I can catch up?  haha.

It is extremely tasty. In fact, I made this cake again to take photos but also because I was making it for a very special friends birthday. After I made it, delivered it, my children begged for their own. So there is another in the oven as we speak. Ha! Its that good!

1 Package of Lemon Duncan Hines Cake Mix
1/3 cup oil
1 cup water
4 large eggs
1 package of Lemonade Kool-Aid packet
2 – small packages of vanilla instant pudding (or 1 large 3.4 oz package)

Preheat oven to 350 degrees

I toss everything together in a bowl in no order and mix on medium for 2 minutes until smooth.
Pour into a greased/flour bunt pan. 10 inch.
Bake 30-40 minutes (mine was 30 because I have a convection oven) till it is lightly brown and a toothpick inserted comes out clean.

Let the the cake set and cool for about 20 min then slide it onto a cooling rack till completely cool.

To make the lemonade glaze.

1 1/2 cups confectioners sugar
1/3 cup lemon juice

Mix well and drizzle over your cake. I do it in segments. Not all at once.  I will do a round of glaze. Let it set, and do another 1 or 2. So it builds up! YUUUMMMYY!!!

Also my choice of the night spoon for the glaze was Dora the Explorer. HAHA

You can also see I had a little helper. She was more than excited to pour everything into my mixer and then help me clean the mixer blade 🙂

The pudding makes it super moist. And it is soooo lemony!! YUM YUM!!!

**PS– I added 1 last photo- the GREEN CAKE. I made this cake last St. Patrick’s Day. By adding in green in both the glaze and the pound cake for some extra green fun for our St. Patty Day dinner! (Taken March 17, 2009)**
