Lemon Parsley Fish Cakes

An awesome friend gave me this recipe a few weeks ago. I have been dieing to try it!! It sounds so easy yet so yummy. I took her word on it.. and they are a hit with the entire family. The kiddos too! I put one of them to work as well in the kitchen with me. It’s that simple!  I did the chopping he did the rest. Then a quick cook in the skillet.

So.. lets get on with the recipe!

1 lb fresh cod fillet (we used frozen Talapia fillets)
1 Tbs extra virgin olive oil (for cooking)
1 egg, beaten
1/4 c thinly-sliced scallions
2 Tbs mayo
1 Tbs lemon juice
2 Tbs Dijon mustard
6 Tbs bread crumbs
3 Tbs chopped fresh parsley
3 dashes Tabasco

Completely cook fish in microwave. Ours took approx 4 minutes. Till all white. Put in a bowl and flake with fork. Combine all ingredients (except olive oil)  plus 1/8 tsp Salt & Pepper. Form into eight patties. (Can be frozen at this point for less than a month. Thaw completely in fridge before cooking). Brown in hot olive oil about 2 minutes each side, or until golden brown. Serve with tartar sauce.

We just used store bought tartar sauce. And a nice leafy green salad along side. What a great tasty dinner!!
