Grilled Corned Beef with Irish Cheddar Sandwich

We actually cooked out corned beef the day before St. Patrick’s day in the slow cooker. You just put the corned beef and all the juice it comes with and any seasonings it comes with in a slow cooker, set to low and cook till it reaches 160 degrees internal temperature. It came out sooo yummy!

Today we took the left overs and made Grilled Sandwiches out of it. Did you know April is Grilled Cheese Month? So keep this in mind for April 😉 We have some more grilled cheese ideas we plan to be cooking up for you.

We got this recipe idea out of the Food Network Magazine.  We changed it up a little bit. So here is how we did it.

Ingredients:
8 slices of sour dough bread
4 slices of Irish cheddar (delicious!!)
8 thin slices of  Kosher pickles
8 slices of corned beef
2 -3 tablespoons of finely chopped Chives
2 – 3 tablespoons of finely chopped Scallions
2 – 3 tablespoons of finely chopped Parsley
6 table spoons of room temperature butter

With the room temperature butter, mash it with the chives, parsley and scallions in a bowl to make a herbed butter.

Lay out 4 slices of bread, spread in the herb butter, then add a slice of cheese, 2 pickles and 2 meats and 1 more slice of bread on top

With regular butter, put it on 1 side and grill it, before you turn it over add a little bit of butter and grill the other side till both are golden brown and the cheese inside has melted.

Soon as you take it off the heat, spread on a tiny bit more of herb butter  to melt on.

That’s it!! It is beyond delicious!! So simple and melts in your mouth!!

I plan to have this again tomorrow for lunch. It is soo good!!
