Pumpkin Butter

YUM. PUMPKIN. I have alot of that in my freezer that Chad and I butchered in November to use up. What a great way. Pumpkin Butter is like Apple Butter. You put it on toast, bagels etc. YUM!!!! It taste really good. I used a recipe off off AllRecipes.com but I tweaked it to my liking…

* 1 (29 ounce aka 3.625 cups but I used 4) can pumpkin puree (I used fresh)
* 3/4 cup apple juice
* 1 teaspoons ground ginger
* 1/2 teaspoon ground cloves
* 2 cups lt. brown sugar
* 2 teaspoons ground cinnamon
* 1 teaspoon ground nutmeg
* 1 tablespoon of vanilla
Then I tossed all of that into a crockpot, mixed well and put on high for 2 hours, then on low for another 1 1/2 hours. It got really thick. It is soo yum!!! I keep reading you are not suppose to can squash and pumpkin is a squash family. So I didnt seal my jars of Pumpkin Butter because when I give it away Ill have everyone put it in their fridge and eat it. I know we will!!

    Good for you, I love pumpkin butter. Mix some with milk and make a pumpkin shake. Good over ice cream, too.
