Chocolate Covered Pumpkin Minis

When you have a husband that loves chocolate more than his wife, you may just find some crazy concoctions created. And usually 9 times out of 10 they are good. And today we have a winner!!  The kids and my mother give it 2 thumbs up. What makes this so great we didn’t dip it in regular chocolate that may have left it too sweet.

Ingredients

–Pumpkin Mini Muffins –  (we used this recipe click here) And adjusted the baking time to 10 minutes for a set of 12 in a mini muffin pan
–Chocolate Almond Bark Candy Coating

Instructions

Melt Almond Bark Chocolate Candy Coating in a double boiler. Once it is fully melted. Dip one mini pumpkin muffin at a time. We use a dipping kit set. You can probably use a fork. Once you stick it in the muffin and dip/coat completely , lightly tap it on the side to tap off any extra coating. Then place on  wax paper to harden.

That is it!

Easy and very yummy. They look great placed in designer mini cupcake liners.

Very rich, so one is about all we could eat. (But I bet we could eat 2 if we tried, and my 5 yr old wanted to try)

We may make these for Thanksgiving. They would look so elegant on the table!!
